Biological Extra Olive Oil:

 

The firm possesses plantations of ulivi that extend him on the splendid hills of Giano of Umbria, Castel Ritaldi and Massa Martana, to an inclusive altitude between the 300 and the 650 mt s.l.m. 
The cultivation happens with traditional and natural methods, without the use of some chemical product what insecticides or herbicides.
The cultivated ulivis enjoy of particular climatic conditions that a very slow maturation of the fruit allows, such to provoke an extremely contained rate of acidity. Particular importance is attributed places to the grounds in the hill, terrestrial rich of structure, permeable, that allow to easily penetrate the roots of the plant. 
The principal cultivars of our ulivetis are Moraiolo, Crusher, Leccino, St. Felice and Sways, the harvest happens in the months of October, November, 
and you/he/she is entirely effected for "browse", manual harvest. 
Not hardly harvests, the olives are suffered courses to the crusher, to be worked in the maximum one of their freshness and integrity. 
The pressing to cold to a temperature checked between the 25 and the 27°,con half mechanics in continuous cycle, that is without interruptions between a phase and the other, optimizing therefore the times to benefit of the final quality. 
The result is an Oil Extra Virgo of high Quality, 
of green-mature color, yielded taste, slightly bitter and spicy, from the tall content of total Polifenoli.

Red and White Wine:

 

As for the olives the processes of collection and working of the grapes are still like those once. In fact the collection still comes made by hand, for being able to only select and to collect the ready clusters, and for the pressing the old presses are still used the old Giovanni (Founder of a Family). We produce three quality Wines: Red of Montefalco, optimal with the meats the cheeses and the salted meat, the Greghetto of the Umbria, a delicate white wine and the Sagrantino Raisin wine of Montefalco, flavour wine to drink at end meal, ideal with the Almonds Tozzett.

 

Black Truffle:

Our Truffle, that grow in the underbrush of the company, is of two quality: 

VALUABLE BLACK TRUFFLE, properly said of Norcia, comes collected to little centimeters underground in the period that goes from the half of November to the half of Febbruary;

SUMMERY TRUFFLE or SCORZONE comes collected nearly in the surface of the land in the period that goes from May to August. For the search of the truffle they come employs the small dogs to you, trains in order to feel the scent to you of the truffle. In kitchen adapted is to the warm plates that cold, go added to the last moment in order to avoid that the scents are dispersed, and do not have need of particular condiments, the only rule to follow is that always use extra olive oil.
